Balsamic Vinegar Reduction of Pedro Ximénez Sotolongo

This reduction is obtained in a traditional way, over a low heat from the Pedro Ximénez vinegar. It is made in a closed concentrator so that no aroma is lost, giving the final product the same aroma as the Pedro Ximénez vinegar.

 

SENSORY CHARACTERISTICS (tasting note):

The vinegar reduction of Pedro Ximénez is at sight very dark mahogany, to the nose it is persistent and soft shades, it is extraordinarily aromatic with a bittersweet taste.

 

MARINATE:

As a dressing is recommended for use with grilled foie gras, meat, ice cream, fresh cheese, salads.
